Risotto alla milanese Remix

Ingredients for 4 persons
  1. 320g saffron risotto
  2. 4 ossobuco halved
  3. 200g Sautéed Nameko Mushrooms
  4. q.s. Double Concentrated Tomato Paste
  5. q.s. Vital Vegetable Stock
  6. q.s. Crema Di Aceto Saffron
  7. q.s. Lemon Pepper, Aromatic Mix
  8. q.s. Pink Salt Mill Single-Use
  9. q.s. carrots
  10. q.s. shallot
  11. q.s. parsley
  12. q.s. butter
  13. q.s. flour
  14. q.s. white wine
Method

  • Salt and flour the meat of the ossobuco, brown with sautéed carrot and shallot, deglaze with white wine and cook with vegetable broth and double tomato paste.

  • Sauté the risotto in the pan and serve on a hot plate, finishing the ossobuco with parsley and lemon pepper, garnish with the creamy saffron vinegar saffron.
